i got this book because i recently embarked on a raw diet, and the photos looked pretty. upon further inspection, this book is just downright silly. the recipes are so odd, and as other reviews have said, not explained well. last night i tried the “real toast”. the recipe is vague, and doesn’t give a temp for the dehydrator. being new at this, i could have used that piece of advise. anyway, the toast came out…odd. like the rest of the recipes in this book. it’s got a sour yet sweet yet spicy taste to it that just isn’t good ! it’s funny because this toast is supposed to be used as the bread for nut butter and berry sandwich. gross ! how on earth would that work ?
the rest of the book is about the same. strange recipes, every one of them almost sprinkled with edible flowers and pomegranate seeds. that isn’t exactly a realistic choice after working all day, and wanting to eat something substantial. there are other raw books out there, raw food/real world being one of them, also matt amsden’s rawvolution.

Juliano, thank you, thank you, thank you for writing this book and sharing your raw chef genius. Please don’t go into screen writing - we need your creative food talents that make raw food taste delicious. Write another raw book instead. Please. The writing is funny and unpretentious, the pictures are fun, the food is incredible. His passion will rub off on you. Much success to you, Juliano. I hope to sign up for your classes.
My husband and I are new raw vegans and have been making our way through the Ann Wigmore, Norman Walker and other pioneer raw food books that Juliano’s book draws on along with the newer scientific studies such as The China Study. The recipes from the Wigmore and Walker books were so-so. We’ve been having so many benefits, however, that we were willing to continue the raw regime: we’ve both lost two sizes in two months, my husband’s pale grey hair is turning dark and it looks like his hair is actually getting thicker on top where it thinned, and we feel great, better than we remember feeling in years. So after the Wigmore/Walker blahs, when we tried our first recipe out of Juliano’s Raw: The Uncook Book, our mouths nearly had an orgasm. Wigmore and Walker point out why a raw food diet is good for your health and Juliano makes it fun and delicious.
We’re working our way through the whole book. ‘Mashed Potatoes’ was the first recipe we tried and to see the look on my husband’s face as he was prepared to dislike the dish was funny. On the first bite, his eyebrows shot up to the top of his head and I think he inhaled the whole plate. We were hooked from that moment. The ‘Cashew Gelato’ alone is worth the price of the book. The Cashew Gelato - oh my god, it’s like you’ve been waiting for this flavor your whole life, and it’s so simple you won’t believe it. The ‘Butternut Squash’ and ‘Fat Mushroom’ soups were incredible and used flavor combinations you’d never believe would work together, yet did, deliciously so. I made the carrot cake for my husband’s birthday and invite your friends because this is real food and a small slice is very filling. Scrumptious! I’ve never been a fan of peanut butter, but fresh nut butters out of the juicer on Juliano’s version of the peanut butter and jelly sandwich on his ‘Essene Bread’, have changed my mind about peanut butter. I just picked the last of the beans and we’re using them for ‘Raw Chili’ tonight. As soon as I finish writing this I’m going to dig into them.
Eating raw is a lifestyle change. You don’t just open a book, and that’s that. Juliano’s recipes will make your mouth water and his enthusiasm is contagious. He has the whole raw experience in his book, but you have to develop some habits to follow it (or any raw foods book). I went through every recipe in his book and used it to make a complete shopping list so I can make almost any item in the book. Each day you make your sprouts, rejuvalac, wheatgrass if you use it, soak your nuts. You get a giant juicer such as a Champion or Green Star, an Excalibur dehydrator (the big one), a Vitamix or similar type of powerful blender. These are basic tools for raw cuisine like an oven is for cooked food. Your health will thank you. (If you have any doubts, read The China Study) Get an idea of which recipes you want to make for the week and shop from your list. His book is divided into categories such as the raw ‘dairy’, which has no dairy in it, soups, salads, deserts, drinks etc. Some recipes have advance prep for such things as the ‘Mellowkraut’ and the ‘Cured Eggplant’. For items such as sauces, mayo and the like that get used in other recipes, he states the shelf life, very useful. Some items such as ‘Black Tar’ that last indefinitely you’ll want to make up and store in a nice jar to have on hand. Go through the whole book. Recognize that you won’t get it all right away but that this book is a learning experience that you’ll savor your way through as you learn how to make these recipes. Read the Wigmore and Walker books along with Juliano’s Raw for the background on why you eat nut cheese and use rejuvalac. You may want to grow some of the herbs Juliano uses such as chocolate mint on your windowsill if your local market doesn’t have them. His way of envisioning food will wake you up to new ways to see such as his single item recipe, ‘Banana Fingers’, (who’d think of it but Juliano?) up to the more complicated fare such as ‘Raw Spring Rolls’. I love some of the names he comes up with - ‘Blood’, for one of the drinks. Buy this book. Your mouth will thank you and so will your health. Anyway, I’m off to eat my ‘Raw Chili’. My mouth is watering already.

Not your typical boring diet book, this is a tart-tongued, no-holds-barred wakeup call to all women who want to be thin. It’s a quick read, it’s very informational, and it’s SO EASY to understand! There’s a little bit of profanity, but it’s a lot less than a good majority of us hear in a regular day. If you’re thinking about becoming vegetarian/vegan, this is definitely the book to buy. I don’t know what else to say, other than I really, REALLY loved this book. I’m recommending it to everyone around me!

I use this in spaghetti sauce to give it texture. Good as a vegetarian alternative to ground beef. Very easy to crumble, though it’s not dry. Decent taste, but I’d suggest using it as an ingredient rather than eating it on its own.

I don’t mind canned beans, but these are better, and I like the varieties. I got all three of the Santa Fe varieties available and my review is the same for each — easy to prepare and yummy! Forget the cans and maintain these in your pantry. I use them for dips, for nachos, for a sidedish, instead of meat in lasagna, and whatever.
