Customer Review: Delicious recipes!
I’m not a vegan, but I love to cook this way most of the time. I have several vegan cookbooks, but this one definitely rises to the top. Not only is it a fun book to ‘read’, but it also has incredible recipes. I have made the hazelnut scones, pumpkin muffins, orrechiette with cherry tomatoes and kalamata tapenade, veggie burgers, sweet potato fries, and millet/spinach polenta with sun-dried tomato pesto. Every one of these recipes (minus the sweet potato fries, which weren’t bad, but also nothing special) was a complete hit. I do have to agree with a reviewer who mentioned that sometimes instructions seem to be missing from certain recipes and that the authors assume that you know what you’re doing in the kitchen. Some of the recipes in this book are probably better for people who have some basic knowledge of how to cook. I think that the dishes taste great enough to compensate for that, though, and I would really recommend this for vegans or anyone trying to cut some of the dairy/meat out of their cooking.
Customer Review: best cookbook ever, vegan or no!
I can’t disagree more strongly with the previous reviewer on…almost everything. EVERYTHING I’ve cooked from this book has been awesome and met with rave reviews from everyone I’ve fed - from vegan to omnivore. And as I eat vegan for reasons both ethical AND health-related, Isa’s tips about cutting fat and replacing refined flours have been really helpful in adapting the dessert recipes so I don’t feel TOO guilty about eating them. Which I do. A LOT. Because they are, quite simply, that awesome! Also, I know from bland food…and how anyone could use that adjective to describe the recipes in VwaV is kind of boggling. A well-stocked spice rack is kind of a prerequisite for cooking recipes from this book and I’ve never felt the need to “punch them up.” (I’ve actually toned a few things down, when cooking for people who are sensitive to spices.) But I guess everyone’s tolerance for that kind of thing differs with their taste buds. Whether or not the author went to culinary school is so not an issue for me. To suggest that her doing so would result in a “good” cookbook is foolish…when she wrote a GREAT one without having done so! (Or did she? I don’t know and, like I said, don’t care.) I’ve given this book to friends and family members as gifts, to their delight, and only find myself writing this review now instead of when it came out and I bought my first copy because it’s gotten so beaten up and covered with food that I thought it time for a backup. No other cookbook on my well-stocked bookshelf gets as much play as this one does. I’m interested to check out Veganomicon, her newest cookbook, but until I do I’ll refer to this as my FAVORITE VEGAN COOKBOOK. EVER!

Shockingly Simple Chocolate Cake
1 1/2 cup white unbleached flour

1 cup sugar

3 1/2 tablespoons cocoa

1 teaspoon baking soda

1/2 tablespoon salt

3 tablespoons oil

3 tablespoons apple sauce

1 tablespoon vinegar

1/3 of a mashed banana (optional but delicious)

1 teaspoon vanilla

2 teaspoons instant coffee (optional for making the cake darker)

1 cup cold water

melted non-dairy baking chocolate (optional)

Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake in a cake

or bundt pan for 40 minutes or until done.

Variation: Pour into well-greased muffin pan and cook for 25 minutes or until done

to make chocolate cupcakes.
