Simple Vegetarian Lunch Ideas?

I am a vegetarian for some time now, but I stopped paying attention to my diet. So I decided to start with healthy lunches at school. Right now I General stuff a granola bar and fruit in my bag and head out the door. Until now, I have the following ideas:
  1 / 2 PETA bread with humus, lettuce, diced tomatoes and cucumbers
  1 / 2 Burrito with brown rice, black beans, lettuce, tomato
  Salad with almonds, peppers, cucumbers, tomatoes, onion
  Brown rice with corn, soybeans and shelled frozen red pepper (which is on line one)
  Pasta with red sauce and beans
  Brown rice with beans
  Tempeh stir fry
  With so few vegetables with dip or a piece of fruit. I thought to make the evening for dinner, but using the leftovers for lunch.
  Would it not enough variety of food?
  What lunch do you take simple with you?
  (I'm cutting down on dairy products and I do not eat eggs)

    Here are some things that I usually range with me when I'm around lunchtime:
      1. Fruit Salad
      2. Fruit (grape, apple, orange, strawberry, etc.)
      3. + Vegetable Dip
      4. Crackers + cream cheese or cheese of your choice (I know you try to reduce, but!) + A fruit (ie apple, pear or peach slice) or cucumber
      Pita Sandwich
      You can get as creative as you want. I will not go into detail but I will give some guidelines:
      Ingredients
      Pita
      Favorite Veggie Combo (tomato, cucumber, lettuce, beans, etc.)
      Favorite cheese (optional)
      Favorite Oil / Herb Dressing
      Mix and match as you want. I usually make a sort of salad stuffed inside a pita bread. Best way to do it is to mix vegetables / cheese / dressing in a bowl and other things in the Pita after wards. If you want to set dressing on the side you can put in a tiny container and put it inside the pita if you plan to eat.
      Traditional Sandwich
      I eat something on a regular basis is a toasted sandwich with cucumber.
      Ingredients
      – Cucumber
      – Romaine lettuce
      – Tomato
      – Onion (sliced thin – very importantly – improves the flavor)
      – 12 Grain Bread
      – Favorite Dressing
      All you have to do is cut the vegetables, toast your bread and put it all together. Put your favorite dressing on the vegetables and makes for a delicious lunch. If you want, you can return the cream or cheddar cheese. I never put on this sandwich just because it tastes good as is.
      Salads
      Who needs to be traditional. Be creative. Some extra yummy salads I tried were a cucumber salad (no lettuce) and tomato salad (no lettuce).

      Veggie Stir Fry and / or rice
      Again! The sky is the limit. Go as crazy as you want. If you want something fast, I recommend getting the Veggie fried frozen at the grocery store. You can cook the evening fairly quickly and put it in a sealed dish to take with you the next day. You can also put your jumping over a good bed of rice.
      Rice is great. Spices go a long way with rice. Zest it up. Use some lemon zest / Orange Zest / lime zest. Beans are a great thing to add to rice. So, things like corn and peas.

    I am a big fan of Mexican cuisine for lunch and sometimes I'll make a salad Mexican vegan. It has black beans (sort of fiesta corn he has peppers in it), chopped red peppers, olives and cumin. The black beans and corn are the central ingredients. You can edit what you want. I have an aunt vegan and she did and I thought it was delicious, but I wanted to take and add a few things. Be creative! :)

    Perhaps you could put together different pasta salad with chopped vegetables. there are also veggie burgers really well there you could do with hamburgers.
