1 package of frozen TVP (Texturized Vegetable Protein- Ground beef imitation type

such as “GimmeLean”)

1 bell pepper, diced

1 medium onion (or according to taste)

1 egg OR equivelent in egg-replacer

Approx. 1.5 cups of bread-crumbs (Add as you feel needed)

A lot of ketchup (the more the better)

Defrost TVP. Hand-mix all ingredients in a large bowl. Put in casserole dish, mold

to dish. Add more ketchup to cover sides and top( like cake icing). Bake for 1 hour

(or until the veggies are tender). Note: When served, it may fall apart, or crumble.

This “meatloaf” is best with corn and mashed potatoes on the side!

Vegetarian Chili

2 1/2 cups raw kidney beans

1 cup raw bulghur

1 cup tomato juice

4 cloves garlic

1 1/2 cups chopped onion

1 cup chopped celery

1 cup chopped carrots

1 cup chopped green pepper

2 cups chopped fresh tomatoes

Juice of 1/2 lemon

1 tsp ground cumin

1 tsp basil

1 tsp chili powder

Salt & pepper

3 Tbs tomato paste

3 Tbs dry red wine

Dash of cayenne

About 3 Tbs olive oil

Put kidney beans in saucepan, covered with 6 cups of water. Soak 3-4 hours. Add

extra water and 1 tsp. salt. Cook until tender (about 1 hour.) Watch water level,

and add more if necessary. Heat tomato juice to a boil. Pour over raw bulghur. Cover

and let stand at least 15 min. Saute onions and garlic in olive oil. Add carrots,

celery and spices. When veggies are almost done, add peppers. Cook until tender.

Combine all ingredients and heat together gently at a moderate heat. Optional: Serve

topped with cheese and/or parsley.

I was initially leery because the bottle needs to be refrigerated after opening, but the benefit of this consistency over hard cubes is hard to overstate. You can use exactly as much or as little as you need; it can be dissolved easily in cold liquids; and the flavor is just excellent. I’ve used it in everything from risotto to aash-e reshteh, and it hasn’t disappointed me yet.

I just tried this product tonight and used it to make delicious gravy! This is the best base I have used as it produced great results. I consistency is so much better than the cube and the taste…you won’t be disappointed. Also bought the mushroom but have not yet tried it.

The recipes in “Low-Fat Favorites” aren’t time-consuming to prepare like the classic Moosewood recipes, making them more weeknight friendly. There are many “tricks” to make a dish seem creamy or cheesy without adding any cream or cheese — all satisfaction, no fat! I made Roasted Vegetables Caribbean Style for a potluck the other night to rave reviews. It was easy to prepare and SO good (page 227). The “Menu Suggestions” feature and the indication of time the recipe takes to prepare are great for planning family dinners or dinner parties, and are included with each recipe.

This is one of my favourite vegetarian cookbooks. I’ve had this book for 10 years and have probably used it more than any other book I own. I’ve had a high success rate with the recipes (I’ve made about 50 of them) and have only had a couple of disappointments. The menu suggestions are very helpful and make it easy to plan a more elaborate meal. Numerous times I have served meals from this book to meat-eater friends and the food has always been very well received. Many of the recipes are quick to prepare and are suitable for everyday. Some of my favourites are: Middle Eastern Chickpeas with Spinach, Pasta with Lentils and Artichoke Hearts, Mushroom and Spinach Fritatta, Pasta with Chickpeas, Tabouli, and Thai Vegetable Curry.

Rinse the beans, and blend all ingredients together in a food processor until

Customer Review: Excellent people food, questionable dog food
This is my second raw food cook book. For the most part, I like it a great deal. I do recommend it: I’m finding it very, very useful, but that being said, I did have some issues with it. First the good: I like that nearly all the ingredients are easy to find, that most of the recipes don’t require a juicer or a food dehydrator, and that most of the recipes (all the ones I’ve tried, anyway) are very simple to make. It’s very nice to toss things into my blender and then chow down. Everything I’ve made so far has been delightful and her “how to stock a raw kitchen” section at the beginning was FANTASTIC and SO helpful. Also helpful was her estimation of how long things “stay good” in the fridge. I’m always worried about that. I like the slice of life sorts of text that some of the other reviewers haven’t liked, but that’s probably a personal thing. Now the Bad: My only beef (hah hah) with the recipes themselves is that I’ve had to cut down on the amount of oil or eliminated it in some cases–she calls for an awful lot of it and it makes me feel queasy. There doesn’t seem to be much rhyme or reason to how things are organized: that’s kind of disconcerting and it can make finding things a pain. I am concerned with her vegan dog food recipes at the back. First admitting my personal bias: I’m not sure it’s a good idea to try and feed dogs, which are primarily carnivores, entirely on plant based foods to begin with (people yes, but cats and dogs, not so much). That aside, what worries me the most is that she talks about feeding her dog things like grapes and garlic, both of which can be very dangerous for dogs in large amounts. That being said I’d probably make her sweet potato dog treats for my dogs if I had a dehydrator (and a dog): seems like a great treat idea to me. Actually I think that sounds kind of yummy for ME to eat too! So I suppose on the whole I’d have to say if you want to take her advice about the vegan dog food, be my guest, just be careful of what you put on Fido’s plate.
Customer Review: disappointing
I am a well seasoned raw foodist and former chef so I feel I speak with some authority. This book is an utter disappointment to me. I have been unhappy with every recipe I have tried-too much fat, too much sweetening. My other comment has nothing to do with the recipes but the remaining content of this book-too many pictures of Ani. She’s a pretty lady but how much space was wasted on photos of her. There are much better raw books out there~almost all of them are better than this narcissistic display.

Everything-but-the-Kitchen-Sink Fried Rice
6 cups pre-cooked brown rice

2 tablespoons olive or peanut oil

2 tablespoons sesame oil

1/3 cup soy sauce

1/3 cup finely minced sweet onion

3 cloves garlic, finely minced

3 cups raw spinach, chopped

2 cups fresh, mushrooms sliced

1/2 red bell pepper, minced

1 cup grated cabbage

1/2 large carrot, grated

1/2 cake tofu, mashed

2 tablespoons seasoned rice vinegar OR 1 1/2 tablespoons vinegar mixed with 1

tablespoon duck sauce or brown sugar

1 scallion, chopped finely

Heat olive or peanut oil in a large pan. Saute mushrooms, onion, bell pepper,

cabbage and carrot until the mushrooms begin to shrink a bit in size. Add spinach,

garlic and scallions. When spinach is wilted, add rice, tofu and all other wet

ingredients. Cook just until rice is completely hot. Serve as a main dish or side

dish.

Shockingly Simple Chocolate Cake
1 1/2 cup white unbleached flour

1 cup sugar

3 1/2 tablespoons cocoa

1 teaspoon baking soda

1/2 tablespoon salt

3 tablespoons oil

3 tablespoons apple sauce

1 tablespoon vinegar

1/3 of a mashed banana (optional but delicious)

1 teaspoon vanilla

2 teaspoons instant coffee (optional for making the cake darker)

1 cup cold water

melted non-dairy baking chocolate (optional)

Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake in a cake

or bundt pan for 40 minutes or until done.

Variation: Pour into well-greased muffin pan and cook for 25 minutes or until done

to make chocolate cupcakes.

This is a great cookbook. The pumkin pie crust is wheat free and it tastes great. It’s always a hit at the holidays, and the pumkin pie part of the recipe is dairy free, this recipe is so nutritious that you can eat it anytime. The entire book has some great solutions. And if you are in NYC you should try to take a class at Ann Marie’s Cooking School.

1/2 cake of firm or extra-firm tofu

2 large tomatoes

handful of fresh basil leaves

salt

garlic powder

olive oil

1/2 loaf Italian/French bread

Cut bread into thick slices. Slice tofu and tomatoes into pieces of equal thickness

This is a fantastic cookbook. Not only does it have great recipes (which are ready in a flash, more often than not, as well as being brief in the ingredients), it encouraged me to remember that the best dishes I serve are often the ones in which a very few items shine forth in their best light. Handy for anyone, vegetarian or not, but especially for the cook who wants to whip up a veggie dish without breaking the bank at the market.

I am definitely not the most experienced or gifted cook around, but this book was a bit too basic, even for me. As someone who eats strictly vegetarian, I own a few veggie cookbooks, and this is the one that gets the least use. Most of the recipes are solidly mediocre. A couple are pretty bad. None have been outstanding so far–though to be fair, I have yet to try every single one. In sum, if you are going for very quick and easy, you may like this cookbook. But if you are looking for a little inspiration in a recipe, this is probably not the book for you.

Chiming in to agree that this is terrific modern, gourmet food. Well flavored but not fussy. Everything I’ve made so far has come out perfectly. I’ve learned new flavor combinations that work well together, and I feel like I can put that information to use when I cook other things. There are plenty of vegan choices, and these recipes are all marked in the table of contents. There are no dessert recipes. Sections are starters, soups, salads, dinners/suppers, pizza, sandwiches, brunch, beverages, side dishes, sauces/spreads. They list sources for some ingredients (like arame, miso or fenugreek) and often give you an easier to locate alternative. For recipes that require a number of steps, they’ve been extremely organized about breaking it down into manageable sections. There are number of fairly involved recipes mixed in with easier things like pizzas (their herb pizza dough is spot on), but the results of the more time consuming recipes are well worth it. Besides, I have enough of those “veg. meals in minutes” type books for quickie meals. Cafe Flora is something else altogether - elegant and original vegetarian recipes that have broadened my cooking horizons.

Sesame Garbanzo-Cucumber Salad
2 large cucumbers

1- 15 oz. can cooked garbanzo beans (chickpeas), rinsed well

3 tablespoons toasted-sesame oil

1 tablespoon tahini

3/4 cup seasoned rice vinegar (or same amount of regular or balsamic vinegar mixed

with 3 tablespoons of brown sugar)

1/2 fresh green pepper

1/4 small sweet onion

Peel the cucumbers, and cut into quarters, lengthwise. Slice into 1/4-inch pieces.

Mince1/2 green pepper and 1/4 small sweet onion into very small pieces. Combine

cucumbers, green pepper, onion, and garbanzo beans in a bowl. In a separate bowl,

mix sesame oil and tahini thoroughly. Add oil and tahini combination and vinegar to

the vegetables. Mix well, and allow to sit at room temperature for at least 15

minutes. Serve.

This base has a fair flavor for making faux chicken soup, etc. However it is a bit sweet. I am still searching for a better base though, something a little more *homemade* tasting…i find myself holding back on how much of this base i really need to make my recipe and adding more spices of my own because the sweetness level fights the taste that i am after. I have to say it is better than most, but still not quite perfect. They need to tweek the recipe just a bit.

Use it in salads, like veggie chicken salad, or chef salad with veggie ham and veggie eggs. Cut it into small or big chunks to make chicken soup; stir fry with fresh vegetables; marinate with black pepper sauce or curry powder then grill; bake or pan fry.

Low-fat Cranberry Muffins with Apple-Peach Sauce
Muffins

2 c. whole wheat or unbleached white flour

2 t. baking powder

1/2 t. salt

1 banana

3 tablespoon tofu

1/5 c. oil

1/4-1/2 c. brown sugar or maple syrup

1 1/2 c. lowfat soy milk or rice milk

Dried cranberries

Combine dry ingredients. Blend tofu and banana together in food processor or blender

untill smooth. Combine wet ingredients. Mix wet and dry together thoroughly and stir

in cranberries. Spoon into greased muffin tin. Fill each muffin mold 3/4 full. Bake

at 400 degrees for about 20 minutes.

Apple-Peach Sauce

3 or 4 medium-sized, ripe peaches
3 ripe apples or 1 cup unsweetened applesauce
Core and slice apples and peaches (peel if desired), and place in a saucepan

(covered) with 1 teaspoon water, on medium heat. Cook until “sauce-y”, stirring

periodically. Mash, and serve hot on muffins. If you use applesauce, add when

peaches are just beginning to become tender.

“I Can’t Believe They’re Vegan” Pancakes
1 cup unbleached all-purpose flour

1 1/2 tablespoons sugar

2 tablespoons baking powder

1/8 teaspoon salt

1 cup milk alternative (soy, rice, oat and almond milks work)

2 tablespoons vegetable oil
Combine dry ingredients and mix thoroughly. Mix in the liquids and beat with a whisk

or electric mixer until the batter is smooth. Measure 1/3 cup batter onto a

previously-heated, well-oiled griddle or pan. When bubbles appear on the surface of

the pancake, in about 2 minutes, flip it with a spatula. Cook it for another 2 to 3

minutes. Remove from griddle. Serve with maple syrup, jam or fruit syrup.
