“I Can’t Believe They’re Vegan” Pancakes
1 cup unbleached all-purpose flour

1 1/2 tablespoons sugar

2 tablespoons baking powder

1/8 teaspoon salt

1 cup milk alternative (soy, rice, oat and almond milks work)

2 tablespoons vegetable oil
Combine dry ingredients and mix thoroughly. Mix in the liquids and beat with a whisk

or electric mixer until the batter is smooth. Measure 1/3 cup batter onto a

previously-heated, well-oiled griddle or pan. When bubbles appear on the surface of

the pancake, in about 2 minutes, flip it with a spatula. Cook it for another 2 to 3

I don’t subscribe to the raw foodist beliefs and certainly not to veganism, I follow a paleo type diet. I bought this book looking for some new vegetable dishes and because I like to eat a lot of stuff raw. First, this book is very well presented, full of mouthwatering photos that will really make you want to make the food. The sauces are nice and the rolls are great. They have become a staple, kids love them and there is plenty of room for experimenting with fillings. Treat this book as a source of dishes to add to other dishes, rather than of meals and it is well worthwhile

I absolutley love this book - so much that I keep giving it as a gift and reccomending it to friends over and over again. I’ve travelled through many of the countries in the book and the writers tales of how they came across each dish really bring back memories of my own adventures and the desire for new ones! It’s essentially a culinary travelogue. Also fantastic are their vegetarian adaptions of classically meat dishes which I was unable to try on my travels as I’m vegetarian but can now attempt at home. The photographs of the locations and the food are inspiring and the recipes easy to follow. I’ve used the book for casual meals and dinner parties alike.
Customer Review: Lovely vegetarian world-view
I purchased this book on a whim but it proved to be a good one. This book is a blend of travel, food and social commentary as we hear tales of how they got to places and the people they met there. Just looking at the pages can give some escapism from the dreary British weather! I liked the way that the authors tackled locations that are not already plundered for recipes, instead looking for new recipes and how different people in exotic locations eat good wholesome food that is largely accessable by us back here. It was interesting especially to read the Caribbean section which although they admitted was largely a meat-eating cuisine, they could still find vegetarian dishes or ways to easily replace the meat in the local recipes. I have to say that some (not all) of the recipes are more dinner-party/’feeling special and brave’ choices, and that I was disappointed that the recipes have a standard serving of 6, which although good for a wholly vegetarian big family or dinner party, it really means maths or leftovers for me as I live in a veggie-hostile environment!!! That said, the recipes are delicious, exciting and the authors refuse to rely on one cooking method or ingredient as I have seen in lesser books, wholly worth it even if it is for when I feel brave in the kitchen!!!

Their sentiment is sound and the writing style invigorating. I’ve tried a number of recipes but tend to go for the simpler ones bc of the time to a)soak and b)dehydrate involved for many of the dishes. The greatest problem for us raw vegans in the UK is sourcing - whilst they list US websites, they don’t do similar for the UK and I’ve only had partial success finding even half the ingredients they talk about. So be warned!

In a casserole dish…
1. Fry 1 large diced onion
2. Add 1 or 2 cloves garlic (diced)
Optional: add dry vegetable soup base (powder or cube)
3. Add 1 can Beans in Tomato sauce. Fry.
4. Add 1 can drained Lentils. Fry.
5. Add spices, herbs, etc…
6. Cover with 1 can drained vegetables and 1 can drained corn.
7. Cover with mashed potatoes.
8. Cover dish and bake at 400 for 10-20 minutes

As a Jamaican-born person who became a vegetarian as an adult, I feared that I’d be giving up a lot of good, old fashioned “home food.” But this book show that that need not be the case — a lot of traditional dishes are already vegetarian, or easy to be vegetarian — plus the book has a good number of creative dishes that are similar to traditional meat-based ones without being silly so-called “substitute” foods. This really is a very good cookbook — easy to follow and shop for recipes, vast majority with reasonable cooking times for working people. Highly recommended.

It was indeed memorable, to sit and rest after the long drive from the northcoast, in the hot midday, and enjoy the quiet breezy veranda of the Lingunea Mansion gifted to her by her childhood friend, Prime Minister Hon. Michael Manley, Chatting in depth about Jamaica, Food and Life, with her Sons and Herself, and reminesing of a childhood in Jamaica when “Bustamante Backbone” was a treat. The Ben Johnson Vegetable Stew, made of all the great leftovers and pieces of vegetable in the fridge made for an adventurous treat on a hot afternoon, when shopping was out of the question. Sweet, Flavorful, Rich, Filling, Heaven in a bowl. Yvonne treated us to her Fried Breadfruit, and some creamy vegeterian Solomon Gundy, which I have yet to locate outside Jamaica, namely in Kingston. Fast-and-Easy Black Beans & Rice

1 can stewed tomatoes
Celery (optional)
Onion, diced (to your liking)
Taco or chili seasoning to taste
1 package boil-in-bag brown rice

Boil rice for 10 minutes. Empty into saucepan and add tomatoes, beans, celery,

onions, and seasoning. Simmer for about 30 minutes. Serve hot. (This can also be

microwaved: Boil rice for 10 minutes in a microwave-safe bowl. Empty into pot, add

remaining ingredients, and nuke for another 5-7 minutes). Note: This also makes

GREAT burritos. Just fill heated flour tortilla with the mixture. Add cheese or soy

cheese if you like, and top as desired.

I’ve ordered quite a few veggie cookbooks lately and now that I’ve got this one - I won’t give it up!! It’s packed full of recipes and has great colour shots (helpful to see what your cooking is supposed to look like). The first 125 pages or so is all about nutrition and the different food groups. Every recipe has a breakdown - calories, protein, fat and carbohydrates. There is such a huge variety of recipes and all of the additional information you get with this book is priceless!!

This book is quick and easy to read, well written, interesting and inspiring. It’s not a cookery book as such - but it is packed with simple recipes interspersed amongst the text. I bought three vegetarian weight loss books in one go, and this is by far the best. The only down side is that there’s no index in the back for the recipes, but you’ll enjoy going back through the book to find them later.

Place bananas on a cookie sheet and freeze for several hours (or until completely or

Customer Review: Don’t do digital!
I was very interested to read Mrs Howard’s review. I was so excited to receive this steamer as a Christmas gift - it steamed the vegetables beautifully. Unfortunately, after two or three uses the timer adjust buttons started to be a bit unreliable - sometimes they would work, sometimes they wouldn’t. Another couple of uses later, the thing stops steaming completely and won’t work at all. Very frustrating when you haven’t noticed until your meat is ready and then you realise you have completely raw vegetables to go with your meal! DON’T BUY THIS! I will be getting a more simple, clock ticking style steamer if I can exchange this one…… what a pain!

I’m not new to steamers, using one every day. When my old one died (from years of use!), I bought this one as it seemed to have every feature I needed and was backed with the James Martin name. Three times I used it, and it worked. THE FOURTH TIME - it refused to steam. Now I’m faced with the hassle of sending it back to get a refund plus I’m down the ?7.99 I paid to have it couriered to me. AND I’ve got to go and buy another steamer! I’m really REALLY furious about this. So DON’T BUY THIS MACHINE - go and find one that works. AND I’ve given it one star because there’s not an option to give it NO STARS AT ALL.

Lemon-Carrot Salad
Refreshing and light Indian dish. It?s made from grated carrots and a little tang of

lemon juice. Yogurt can be added to it but it’s great plain. Contributed by Asha

6 -7 medium-sized carrots- washed and grated

2 Tbs. lemon juice

1 tsp. salt

1/2 tsp. black pepper

1/2 tsp. cumin seeds

1 tsp. vegetable oil

Put grated carrots, salt and lemon juice in a medium-size serving bowl and mix well.

Heat a small skillet and add vegetable oil. When the oil is hot, add cumin seeds and

black pepper. Fry this mixture for 1 minute and remove from heat. Blend the fried

spices thoroughly with the carrots and other ingredients and serve chilled.

Tofu Lasagna
3 1/2 cups spaghetti sauce
1 1/2 lbs. firm tofu
1/4 cup lemon juice
2 tsp. dried basil
2 tsp. honey
2 tsp. salt
Up to 3 cloves of garlic (depending on taste)
1/2 lb. cooked lasagna noodles
[Note: If you want to you can use half tofu and half mashed patatoes.]
Preheat oven to 350 degrees. In a blender or food processor, puree tofu, lemon

juice, basil, honey, salt and garlic to a fine ricotta-like texture. Make layers in

a 9″x13″ baking dish. Layer sauce, noodles, filling (tofu), sauce, noodles, filling,

noodles sauce. Bake for about 30 minutes.

1 package of frozen TVP (Texturized Vegetable Protein- Ground beef imitation type

such as “GimmeLean”)

1 bell pepper, diced

1 medium onion (or according to taste)

1 egg OR equivelent in egg-replacer

Approx. 1.5 cups of bread-crumbs (Add as you feel needed)

A lot of ketchup (the more the better)

Defrost TVP. Hand-mix all ingredients in a large bowl. Put in casserole dish, mold

to dish. Add more ketchup to cover sides and top( like cake icing). Bake for 1 hour

(or until the veggies are tender). Note: When served, it may fall apart, or crumble.

This “meatloaf” is best with corn and mashed potatoes on the side!

The book is arranged by vegetable type, so it’s easy to look up recipes that use what you’ve got in the pantry. Information such as the peak season for each vegetable and the vitamins found in each is also included. Polly Tyrer and the other four contributing authors offer a wide range of recipes from all over the world. Mediterranean dishes such as fresh spinach cannelloni appear alongside Asian-inspired recipes like noodles with peanut sauce and raw vegetables as well as Middle-Eastern and South American flavours. In fact, there is such a plethora of choice that it’s hard to decide which recipe (or which continent) to start with.

You don’t have to be a vegetarian to enjoy using this cookbook. Most of the dishes (for example, the Thai red pumpkin and coconut curry) are so hearty that you won’t miss the meat at all. Alternatively, you could use many of them (such as asparagus with lemon and caper sauce) as accompaniments to a carnivorous meal. On the downside, only 16 of the 1000 recipes are accompanied by a photograph. This may cause less-confident cooks to shy away from the more complex recipes, but most of the dishes are simple enough and the steps are well explained. This is my favourite cookery book - and I’ve got LOADS of them. A lovely collection that has eased my transition to near-vegetarianism. Unusual, elegant recipes that always seem to work out despite initial fears(learn to trust the book!). Good clear instructions - many of the recipes are fairly complex, but there’s a good spread of difficulty and success may inspire you to tackle some of the big ones! A good index helps you to use up spare fruit and veg. The results are wholesome with plenty of ideas on incorporating sufficient protein in the vegetarian diet. And the book looks lovely on the shelf, too. Recommended.

I hate those cookery books where the index is arranged according to the first ingredient of a recipe… you know, “rocket and tomato bake with goat’s cheese topping,” and you don’t find mention of tomato or goat’s cheese under their respective letters. Well, the index of this huge book is fantastic, arranged according to every ingredient used in every recipe, so whether you’re looking under rocket, tomato or goat’s cheese, you will find your recipe or an idea for an ingredient in a flash. Another fantastic aspect of this book is the amazing variety of ingredients, and the division of chapters according to foods rather than your traditional starter, main meal, salad and dessert categories. The scope of ingredients used is very wide, from asparagus to zuchinni, and it has motivated me to use so many ingredients I had never used before, like fennel, rhubarb, halloumi cheese or even watercress. It’s introduced me to some fantastic and tasty ingredients combined to give you mouth-watering flavours. I’ve made about 50 meals from this book and so far have been disappointed only with the fennel and melon risotto - apart from that each diah I’ve cooked up was exciting, original and a real feast. This extensive book is a must in any vegetarian kitchen, and will suit the beginner and advanced cook alike, with really simple recipes but also some time-consuming expert ones. Certainly one of the books I used most often.

Vegetarian Chili
Contributed by Tesha Olsen. Serves 6-8

2 1/2 cups raw kidney beans

1 cup raw bulghur

1 cup tomato juice

4 cloves garlic

1 1/2 cups chopped onion

1 cup chopped celery

1 cup chopped carrots

1 cup chopped green pepper

2 cups chopped fresh tomatoes

Juice of 1/2 lemon

1 tsp ground cumin

1 tsp basil

1 tsp chili powder

Salt & pepper

3 Tbs tomato paste

3 Tbs dry red wine

Dash of cayenne

About 3 Tbs olive oil

Put kidney beans in saucepan, covered with 6 cups of water. Soak 3-4 hours. Add

extra water and 1 tsp. salt. Cook until tender (about 1 hour.) Watch water level,

and add more if necessary. Heat tomato juice to a boil. Pour over raw bulghur. Cover

and let stand at least 15 min. Saute onions and garlic in olive oil. Add carrots,

celery and spices. When veggies are almost done, add peppers. Cook until tender.

Combine all ingredients and heat together gently at a moderate heat. Optional: Serve

topped with cheese and/or parsley.

I found this book a bit of a let down in terms of imagination - obviously salads, indian curries and stir frys are wheat/dairy free and can be found in most veggie cook books, and its a bit of a cop out to ask us to use ‘wheat free’ pasta - we don’t need to buy a cookbook just to make ordinary recipes - what I want is recipes that circumvent the pasta all together - for example I make a brilliant lasagne using root veg as the lasagne replacement.. There is also an over dependance on rice flour. I use all kinds of different flours (millet, chick pea, quinoa etc to ring the changes, and l experiment with non flour ingredients such as nut powder etc… also where are the egg free recipes? ‘egg replacer’ is just another easy way out.. Also because being vegan and allergy free is such a challenge nutritionally, it should make use of sprouted grains… and have more emphasis on balancing the diet..

I bought this book because I have a son who cannot tolerate gluten. I tried the carrot, parsnip and cashew nut roast first. The mixture was bland and oversweet because all the vegetables and the nuts have a sweet flavour. I had to add lots of flavourings to spice it up. It still wasn’t very good and the instructions didn’t tell me to chope the nuts, although I can’t believe they were supposed to be added whole. The rice flour bread was disgusting - tasted of baking powder and bounced like rubber- reminiscent of the steam puddings we had at school. If I were gluten intolerant I’d rather do without bread than eat this. I hope it doesn’t kill the birds as it’s going outside. Loathe to try any other recipes.

I’m slightly obsessed with vegan cookbooks and have to say that this is definitely one of the best I have seen so far. The book’s 400 recipes cover every eventuality, there is a lot of nutritional information and bits and pieces of useful advice and suggestions. Most recipes do not contain a vast list of ingredients and are fairly straightforward to re-create at home. I do like the book’s layout (there is a list of all recipes contained in each chapter at the beginning of the chapter as well as a comprehensive index), although it is a bit of a pity that there are no photos of the delicious recipes. This book is very useful for both everyday cooking and occasions and I absolutely love it!

Mexican Bean Spread/Dip
1 can cannelini or pinto beans

3/4 cup salsa

2 tablespoons of finely chopped cilantro

Rinse the beans, and blend all ingredients together in a food processor until

creamy. Serve on pita, bread, as a vegetable dip.

Customer Review: Boring,,,,and no pics
This is the first vegan book I’ve purchased. I’m a vegetarian at the moment, but was hoping that this book would prove insightful and helpful in figuring out what i could eat, as I’m the pickiest eater in the world. Well, the book arrived, nice cover that’s about it. There are no pictures at all in the book, so it’s just dull. Most of the recipes are very basic, and over half i wouldn’t eat anyway. Why can’t someone create a low carb, low calorie Vegan book. I don’t eat rice, pasta, mushrooms (related to mould, ewwww), and dont want to get fat so out go all the cake/pudding recipes as well. That leaves me with some of the salads, but guess what, don’t like salads either. The recipes included seem to me to be created by some basic cook rather than a skilled chef. The positive things in this book are that you get UK and USA measurements against all the ingredients and that you get a shopping list at the front of the book, great for a regimented diet, but who what’s a Set meal each day? are we still in school? I was looking for some healthy bean/vegetable recipes which would be suitable for a low calorie diet, but this wasn’t the book for me. I guess I’ll just have to continue throwing things into the pan and seeing what happens as per usual.
Customer Review: Easy, delicious, practical
This is the main book I use in my kitchen. I find it very practical, without pictures to distract from cooking. After all, I’m there to prepare a nourishing meal, not to look at pretty photos, and this book does exactly that: easy recipes that taste great. I would recommend it to any vegan who’s just starting and also to anyone who’s experienced, as it provides ideas to be adapted to the fantasy of the cook.

Everything-but-the-Kitchen-Sink Fried Rice
6 cups pre-cooked brown rice

2 tablespoons olive or peanut oil

2 tablespoons sesame oil

1/3 cup soy sauce

1/3 cup finely minced sweet onion

3 cloves garlic, finely minced

3 cups raw spinach, chopped

2 cups fresh, mushrooms sliced

1/2 red bell pepper, minced

1 cup grated cabbage

1/2 large carrot, grated

1/2 cake tofu, mashed

2 tablespoons seasoned rice vinegar OR 1 1/2 tablespoons vinegar mixed with 1

tablespoon duck sauce or brown sugar

1 scallion, chopped finely

Heat olive or peanut oil in a large pan. Saute mushrooms, onion, bell pepper,

cabbage and carrot until the mushrooms begin to shrink a bit in size. Add spinach,

garlic and scallions. When spinach is wilted, add rice, tofu and all other wet

ingredients. Cook just until rice is completely hot. Serve as a main dish or side

dish.
