Shockingly Simple Chocolate Cake
1 1/2 cup white unbleached flour

1 cup sugar

3 1/2 tablespoons cocoa

1 teaspoon baking soda

1/2 tablespoon salt

3 tablespoons oil

3 tablespoons apple sauce

1 tablespoon vinegar

1/3 of a mashed banana (optional but delicious)

1 teaspoon vanilla

2 teaspoons instant coffee (optional for making the cake darker)

1 cup cold water

melted non-dairy baking chocolate (optional)

Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake in a cake

or bundt pan for 40 minutes or until done.

Variation: Pour into well-greased muffin pan and cook for 25 minutes or until done

A very very well written and informative read about vegetarian cooking to suit all budgets. The book is packed to the brim of tips to cater for all levels of cooking ability, it's ideal for the student or novice vegetarian chef alike as it targets people who've never cooked before and includes many great recepies that don't cost an awful lot. I suggest buying two copies as you'll not doubt wear the first one out long before your tired of it. The book also contains the seedling symbol as it's been approved by the Vegetarian Society.

I can’t say enough good things about this book. I was surprised by the comment about pasta dishes as only 1 out of the 10 chapters in this relates to pasta. For the tofu fans I would highly recommend the mushroom and tofu stroganoff which has a lovely strong rich flavor. There is a great variety in this book and I have yet to become bored of it, in fact when I recently moved house I was in a blind panic when I thought I’d lost it! There are a couple of recipes that will take you longer when you make them this first couple of times, but in general they live up to the promise of being easy to throw together in 30 mins. I often delve into this during the week after being at work all day and this is the only one of my recipe books I would dare to do this with. If you are looking at his book as a Christmas present then that gives just enough time to try the wonderful seasonal delight of Jerusalem artichokes with red wine and Gruyere. The best place to find these is always small fruit and veg shops as you don’t really see them in the supermarket other than Sainsbury’s. Enjoy!
Customer Review: Good if you like middle eastern flavours
Easy to use recipes and great if you like spicier, middle eastern flavours and colourful food (not bland, mushy stuff!). I don't find the ingredients unusual or hard to source, unlike other reviewers, but then I do live in London! One of the few recipe books where I've made more than 2 or 3 recipes.

“Faux” Mozzerella, Tomato, and Basil Sandwich
1/2 cake of firm or extra-firm tofu

2 large tomatoes

handful of fresh basil leaves

salt

garlic powder

olive oil

1/2 loaf Italian/French bread

Cut bread into thick slices. Slice tofu and tomatoes into pieces of equal thickness

(approximatly 1/4 to 1/2 inch). Mince basil leaves. Place a slice of tofu on a slice

of bread, and drizzle with a small amount of olive oil. Add salt and garlic powder

(adjust amount to your preference), as well as a generous amount of basil. Place

another slice of bread on top, and serve.

Wow I don’t think I could possibly be more impressed with this book. I LOVE IT!!! I’m a vegan student so don’t have masses of time or money to cook, but this cookbook is the best. I’ve tried getting on with other cookbooks for vegans in the past but found them too complicated and boring! The only downside is that this is AMERICAN so all measurements in cups and some ingredients unfamiliar (eg zucchini = aubergine and capsicum = pepper). I promise if you buy it, you won’t be disappointed!

Having really enjoyed ‘How it all vegan’, Tanya and Sarah’s first cookery book, I was delighted to see that there was a sequel. ‘The Garden of Vegan’, like its predecessor, is wacky, fun and full of a great range of recipes for breakfast, snacks, soups, appetisers, sides, main dishes, salads and dressings, baked goods and desserts, and more. What makes it unique, however, is not only the witty, conversational style, but the ‘extras’ you don’t usually get in a cook book. These include various hints and tips; not-so-serious ideas for parties; recipes for non-food items such as bath bombs; and even how to make a ’sock monkey’ (read the book to find out more)!

I’ve not done a great deal of the recipes from this book, but the ones I’ve tried (especially the cookies) are very good indeed. It’s true that the author relies on the commercial egg replacers a bit too much, but these are the only recipes that actually render the egg replacer useable!
Customer Review: Nothing new…
Most of these recipes would be easy to convert if you were a fairly experiened baker. All the recipes rely on using the Vegan Ener-G Egg Replacer, which I find a nightmare to use. The baking recipes are much better in La Dolce Vegan!: Vegan Livin’ Made Easy by Sarah Kramer.

Mince1/2 green pepper and 1/4 small sweet onion into very small pieces. Combine

cucumbers, green pepper, onion, and garbanzo beans in a bowl. In a separate bowl,

mix sesame oil and tahini thoroughly. Add oil and tahini combination and vinegar to

the vegetables. Mix well, and allow to sit at room temperature for at least 15

It’s worth buying for the desserts alone which I guess technically are vegetarian but you could get the same stuff out of another book. However, I’m a carnivore and was looking for a book to buy that has stuff in I would actually eat as I’m trying to get more fruit and veg down my neck. And this book fulfils that need. It has stuff in there that a fussy veg eater (like myself) would actually want to eat and not just stuff like nut roasts, veg casseroles etc. Recommended.
Customer Review: Excellent recipes
I am always a little skeptical, when I pick up a Vegetarian Cookbook, that has been written by a self-avowed meat-eater, but this book is a pleasant surprise, as the recipes are not only fresh and sometimes original, but also easy to prepare. My only gripe with it, and the reason why I have given it 4 stars instead of 5, is because I feel most of the recipes rely far too heavily on dairy and eggs. In fact, I counted quite a lot of eggs for just one recipe. I don’t believe that overconsumption of dairy produce and eggs is acceptible from a health point of view. But I hope that people would relaise that a lot of these recipes can be cooked for special treats and dinner parties. My main reason for buying this book, is because I have eaten at the author’s restaurant and I was very impressed with it and I wanted to see what other delicacies I have been missing out on.

2 c. whole wheat or unbleached white flour

2 t. baking powder

1/2 t. salt

1 banana

3 tablespoon tofu

1/5 c. oil

1/4-1/2 c. brown sugar or maple syrup

1 1/2 c. lowfat soy milk or rice milk

Dried cranberries

Combine dry ingredients. Blend tofu and banana together in food processor or blender

untill smooth. Combine wet ingredients. Mix wet and dry together thoroughly and stir

in cranberries. Spoon into greased muffin tin. Fill each muffin mold 3/4 full. Bake

at 400 degrees for about 20 minutes.

Apple-Peach Sauce

3 or 4 medium-sized, ripe peaches
3 ripe apples or 1 cup unsweetened applesauce
Core and slice apples and peaches (peel if desired), and place in a saucepan

(covered) with 1 teaspoon water, on medium heat. Cook until “sauce-y”, stirring

periodically. Mash, and serve hot on muffins. If you use applesauce, add when

peaches are just beginning to become tender.

“I Can’t Believe They’re Vegan” Pancakes
1 cup unbleached all-purpose flour

1 1/2 tablespoons sugar

2 tablespoons baking powder

1/8 teaspoon salt

1 cup milk alternative (soy, rice, oat and almond milks work)

I love this book! I’m a hopeless cook, but determined to bring up my daughter on a varied vegetarian diet of homecooked food rather than ready-made stuff. As well as many recipes, the book also contains sample weekly menu plans - particularly useful for the early weeks of weaning. All recipes also indicate whether or not they’ll freeze well.

This book put paid to my worries - it’s fantastic and I would thoroughly recommend it to all - non-veggies included. 1. Fry 1 large diced onion
2. Add 1 or 2 cloves garlic (diced)

There are some great recipes in this book. I haven’t had it long and have tried only a handful but I can’t wait to try out the rest at any given opportunity. Some of the recipes are a bit involved, you can tell they are restaurant recipes - they’re a bit special for when you’re cooking after a day at work. But they are fantastic for entertaining friends or family, or when you have more time. They taste fantastic and the ones I have tried instantly received “classic” status among those who ate them!

Whether, as the reviewer at the bottom of the page claims, there is a lack of wholefood in this collection or not, the recipes are accessible, impressive looking and fabulously tasty… and thats what a cookbook is all about. I find with many cook books that the recipes are fiddly and time consuming and usually demand a pinch of one ingredient and a splash of another, and before long you have a cupboard full of rare spices that you are never going to use again. This book however is simple to follow, contains ingredients that are generally easy to find in shops and ones that you are likely to use again. The book gives ideas for breakfasts, lunches and snacks as well as main courses, and gives a real variety of dishes. I haven’t cooked all of them yet, but they are all appealing and all things that you could happily feed to non-vegetarian guests or family members, as I have done to positive feedback! The only thing I thought was slightly odd is that one of the recipes calls for gelatine, but it’s easy enough to steer clear of one recipe, there are plenty to choose from. All in all, there is something here for everyone. The meals are healthy, simple and tasty.
Customer Review: A useful addition
After my sister was recently diagnosed with diabetes, I thought I’d give the GI diet a go, as it is supposed to be useful in warding diabetes off. The book is well written and shows suggested meal plans for Vegetarian Adults, Vegan Adults, Vegetarian Teenagers, Vegan Teenagers, Vegetarian Children and Vegan Children. The recipes are clearly laid out and easy to follow, and the photography is bright and cheery throughout. Highly recommended (and better than Rose Elliott’s book!)

This is a masterpiece of information and recipes that are mouthwatering. I am a food writer and recipe developer and this book is one of my most used resources. Hope to see a new version of Waters’ “Chez Panisse Menu Cookbook” (my 1982 copy is nearly worn out) in the very near future.

One of the best vegetarian cookbook ever. About all recipes I tried were wonderful.

Lemon-Carrot Salad
Refreshing and light Indian dish. It?s made from grated carrots and a little tang of

lemon juice. Yogurt can be added to it but it’s great plain. Contributed by Asha

Kumar.

6 -7 medium-sized carrots- washed and grated

2 Tbs. lemon juice

1 tsp. salt

1/2 tsp. black pepper

1/2 tsp. cumin seeds

1 tsp. vegetable oil

Put grated carrots, salt and lemon juice in a medium-size serving bowl and mix well.

Heat a small skillet and add vegetable oil. When the oil is hot, add cumin seeds and

black pepper. Fry this mixture for 1 minute and remove from heat. Blend the fried

spices thoroughly with the carrots and other ingredients and serve chilled.
