Im not a vegetarian but wanted to learn how to incorporate more veg and less meat into my meals. This cookbook is great, every recipe is fantastic, well written and no bizzare hard to find equipment or ingredients. Everyone in my house loves the meals. The instructions are very simple to follow.

Once you try a recipe in this book it is an instant favorite. All the recipes are winners. And it’s easy. Simply put this book is full of recipes that will produce “good stuff”. Though the recipes are “international” the result is very American.

I can’t say enough good things about this book. I was surprised by the comment about pasta dishes as only 1 out of the 10 chapters in this relates to pasta. For the tofu fans I would highly recommend the mushroom and tofu stroganoff which has a lovely strong rich flavor. There is a great variety in this book and I have yet to become bored of it, in fact when I recently moved house I was in a blind panic when I thought I’d lost it! There are a couple of recipes that will take you longer when you make them this first couple of times, but in general they live up to the promise of being easy to throw together in 30 mins. I often delve into this during the week after being at work all day and this is the only one of my recipe books I would dare to do this with. If you are looking at his book as a Christmas present then that gives just enough time to try the wonderful seasonal delight of Jerusalem artichokes with red wine and Gruyere. The best place to find these is always small fruit and veg shops as you don’t really see them in the supermarket other than Sainsbury’s. Enjoy!
Customer Review: Good if you like middle eastern flavours
Easy to use recipes and great if you like spicier, middle eastern flavours and colourful food (not bland, mushy stuff!). I don't find the ingredients unusual or hard to source, unlike other reviewers, but then I do live in London! One of the few recipe books where I've made more than 2 or 3 recipes.

Vegetarian Chili
Contributed by Tesha Olsen. Serves 6-8

2 1/2 cups raw kidney beans

1 cup raw bulghur

1 cup tomato juice

4 cloves garlic

1 1/2 cups chopped onion

1 cup chopped celery

1 cup chopped carrots

1 cup chopped green pepper

2 cups chopped fresh tomatoes

Juice of 1/2 lemon

1 tsp ground cumin

1 tsp basil

1 tsp chili powder

Salt & pepper

3 Tbs tomato paste

3 Tbs dry red wine

Dash of cayenne

About 3 Tbs olive oil

Put kidney beans in saucepan, covered with 6 cups of water. Soak 3-4 hours. Add

extra water and 1 tsp. salt. Cook until tender (about 1 hour.) Watch water level,

and add more if necessary. Heat tomato juice to a boil. Pour over raw bulghur. Cover

and let stand at least 15 min. Saute onions and garlic in olive oil. Add carrots,

celery and spices. When veggies are almost done, add peppers. Cook until tender.

Combine all ingredients and heat together gently at a moderate heat. Optional: Serve

topped with cheese and/or parsley.

I disagree with the review below on the child rearing parts of this book which I found very down to earth and sensible. As a mother of three I read this when pregnant with my first child and thought both the recipes (lots suggestions for adapting for toddlers) and other child rearing info useful. Rose Elliot suggests keeping toys in bottom drawers and accessible places and things you don't want broken out of reach - much bettr than not adapting your house and trying to say “no” to a difficult two year old I would have thought.
Customer Review: A disappointing book from a well known author
Having been Vegetarian for over thirteen years I have read numerous books on all aspects of vegetariansim including those written by Rose Elliot. I was so disappointed with this book. The section on vegetarian pregnancy was very short and incredibly basic with very little information that most vegetarians probably know anyway. I think the worst thing about this book was the rather large section dedicated to parenting skills. While this may have been a useful section for some, I purchased the book for the vegetarian topics and found this section irrelevant. I found that her comments on childcare ridiculous; writing that when your child has a tamtrum you should cuddle them until they are no longer upset. She also suggests putting everything away so your child cannot touch anything and break it - how about using the word no! Perhaps if this book had provided a more in depth look at vegetarian mums and children it would been a much more useful and interesting read.

A great book for all people not just beginners. This is my first cook book and it is great and given me so many ideas

Mexican Bean Spread/Dip
1 can cannelini or pinto beans

3/4 cup salsa

2 tablespoons of finely chopped cilantro

Rinse the beans, and blend all ingredients together in a food processor until

creamy. Serve on pita, bread, as a vegetable dip.
