All-natural hardwood logs injected with shiitake spawn produce mushrooms every two months for years, using room light and room temperature. To produce mushrooms, or “fruit” the log, soak it in non-chlorinated ice water for 24 hours in its own tray. Harvest in 6-10 days. Logs require regular soaking in nonchlorinated room-temperature water every two weeks. Log-grown Shiitakes are high in protein, low in fat and have a meaty texture. They have a deep, rich flavor and absorb the flavors of spices, herbs and foods they’re cooked with. Chefs prefer shiitakes grown on logs for their flavor, texture, and color. PLEASE NOTE: Logs are living organisms and can’t stay in the box without air and light for more than two weeks.

I have been absolutely ecstatic since my mushrooms started growing, which was immediately! All I did was soak it in water and set it up and I’ve watched them grow for a week. The brochure that came with it said that the log might not fruit (produce mushrooms) just after shipping, but mine did and I have more than a dozen huge mushrooms to show for it! I just sauted them and they were amazingly delicious, and I’m happy to know about all their salubrious properties as well. Everyone who comes over to my house sees my log and comments on what an interesting project it is. I wish I could take more credit for growing them but really the log does it effortlessly once it’s been soaked in cold water for 24 hours. Really, this is one of the best products I’ve ever gotten. I’m getting a second one so that I can have mushrooms growing each month (one log has to rest for two months after producing mushrooms). It’s just awesome. I love it.

During that time we have experienced many different kinds of wheat. We have used wheat from Texas, Utah, Montana, California, and Israel both organic and non organic. There are two kinds of wheat one can buy: chemical free and certified organic. Most wheat is chemical free in that the farmer might or might not use an herbicide to control the weeds in his fields. If he uses chemicals on the wheat, it will cause a distinct taste in the bread thus no chemicals are used on the wheat itself. Then there is certified organic: Certified organic is the same as chemical free except the wheat is grown by farmers who have not used chemicals on their land for over ten years. The difference is the certification. If a wheat is organic and you grow it in organic soil, it will have the necessary organisms in the soil to help it assimilate the minerals properly. “I Can’t Believe They’re Vegan” Pancakes
1 cup unbleached all-purpose flour
1 1/2 tablespoons sugar
2 tablespoons baking powder
1/8 teaspoon salt
1 cup milk alternative (soy, rice, oat and almond milks work)
2 tablespoons vegetable oil
Combine dry ingredients and mix thoroughly. Mix in the liquids and beat with a whisk
or electric mixer until the batter is smooth. Measure 1/3 cup batter onto a
previously-heated, well-oiled griddle or pan. When bubbles appear on the surface of
the pancake, in about 2 minutes, flip it with a spatula. Cook it for another 2 to 3
minutes. Remove from griddle. Serve with maple syrup, jam or fruit syrup.
