Customer Review: Try the lentil and sweet potato soup and change your life!
I recently bought this book for my sister and decided to taste test one of the recipes before I handed it on- sorry sis, you’ll have to buy your own copy now. There’s sisterly love, and then there’s a vegan taste of the carribean love! All the recipes I’ve tried so far have been very clear and uncomplicated but taste like you’ve had a professional chef over for dinner. I’ve just lost a load of weight, but won’t mind getting fat using this book. Buy it and change your kitchen!!

I have been using this recipe book for the last three months and it is excellent. Linda gives lots of information on the history of this cuisine and how it is traditionally served. All the recipes are clearly laid out and very uncomplicated. All the dishes I have prepared have worked every time. Everyone I have prepared this food for, all of them meat eaters I must add, has thoroughly enjoyed it especially the corn cakes of which a mexican version appears in the Vegan Taste of Mexico (yet another excellent recipe book by Linda). I have tried many vegan cookbooks over the last two and a half years and I must say Linda’s regional cook books have proved to be the best. Hopefully Linda will cover other regions soon such as, Japan, China, Thailand and Greece maybe?…

If you’re like me, one of those who thought tofu was made from the brains of vegetarians, you’ll be very pleasantly surprised by this wonderful book. I was amused and bewildered by the delightful array of colourful and often magical tofundly concoctions. I actually received this book as a present, being a kitchen snob someone obviously thought it “up my street”. They got it bang on! I’d recommend this book to anyone who takes their cooking seriously, or who would like to entertain a veggie guest with something a trifle more appealing than veggie lasagne! I thought I’d read what others have said, but finding no reviews felt compelled to add one of my own. If you fancy a little of something different, or are new to being a veggie, make this book your first stop! Blend tofu (as a substitute for cream)with frozen fruit to make fabulous smoothie milkshakes…this wickedly simple breakfast recipe alone is reason enough to buy this book!

students living on their own ‘cuz it is cheap!
In a casserole dish…
1. Fry 1 large diced onion
2. Add 1 or 2 cloves garlic (diced)
Optional: add dry vegetable soup base (powder or cube)
3. Add 1 can Beans in Tomato sauce. Fry.
4. Add 1 can drained Lentils. Fry.
5. Add spices, herbs, etc…
6. Cover with 1 can drained vegetables and 1 can drained corn.
7. Cover with mashed potatoes.
8. Cover dish and bake at 400 for 10-20 minutes
