Congratulations to Mr. Wiegand for going so far in debunking the myth that meat and dairy are required to compete at the highest levels of endurance sports! Also in showing that one can expect an increased edge over others while consuming a plant based diet during training and competition. His list of current vegan champions in their respective sports supports his work. Less sleep required, less recovery time and greater and greater energy are what one draws from his experiences and documentation from a vegan diet. While some look at veganism as a personal-philosophical -spiritual choice it becomes clear through the reading of the book that veganism simply is superior in every measurable aspect of physical and emotional health. I can corroborate that one CAN even do some training while vegan without necessarily eating/fueling up before a training session (i.e run, bycicling) as the diet gives so much energy. I will add through experience that the more raw one’s diet becomes the greater one’s energy is felt.

I found it easy to read and it made good sense; there is some science for those who want more understanding. By following the advice of the book, I effortlessly lost weight to the point of attaining the muscle definition I had in my 20’s! Customer Review: A great book to add to your collection
I have enjoyed using this book & the results have been great with all of the recipies I’ve tried so far. There is a big section at the beginning of book about the Ingredients used in Indian cooking with great tips on where to find the spices & vegetables that are more difficult to find. The recipes are easy to follow (although some are complex, so make sure you read it all before starting) I would definitely recommend it to anyone looking to improve their cooking repertoire.

This book focuses on a wide range of vegetarian food, the styles of which cover the breadth of the continent.Ingredients and their accessibility in the west is explained. This is the kind of book which anyone who has visited India who wants to create at home some of the versatility of its cuisine should have on their shelf. Furthermore it has many recipes which Vegans could use and thos who are intolerant to wheat.

Shockingly Simple Chocolate Cake
1 1/2 cup white unbleached flour

1 cup sugar

3 1/2 tablespoons cocoa

1 teaspoon baking soda

1/2 tablespoon salt

3 tablespoons oil

3 tablespoons apple sauce

1 tablespoon vinegar

1/3 of a mashed banana (optional but delicious)

1 teaspoon vanilla

2 teaspoons instant coffee (optional for making the cake darker)

1 cup cold water

melted non-dairy baking chocolate (optional)

Mix the dry ingredients. Add the wet ingredients. Stir until smooth. Bake in a cake

or bundt pan for 40 minutes or until done.

Variation: Pour into well-greased muffin pan and cook for 25 minutes or until done

to make chocolate cupcakes.
