I highly recommend this book, the recipes are imaginative, easy to follow and very tasty. It is excellent to find a low carb recipe book that is also healthy and not full of high fat and high meat content as a lot of low carb recipe books are. Well done Celia Brooks Brown.

Customer Review: Very good buy
I find with many cook books that the recipes are fiddly and time consuming and usually demand a pinch of one ingredient and a splash of another, and before long you have a cupboard full of rare spices that you are never going to use again. This book however is simple to follow, contains ingredients that are generally easy to find in shops and ones that you are likely to use again. The book gives ideas for breakfasts, lunches and snacks as well as main courses, and gives a real variety of dishes. I haven’t cooked all of them yet, but they are all appealing and all things that you could happily feed to non-vegetarian guests or family members, as I have done to positive feedback! The only thing I thought was slightly odd is that one of the recipes calls for gelatine, but it’s easy enough to steer clear of one recipe, there are plenty to choose from. All in all, there is something here for everyone. The meals are healthy, simple and tasty.
Customer Review: A useful addition
After my sister was recently diagnosed with diabetes, I thought I’d give the GI diet a go, as it is supposed to be useful in warding diabetes off. The book is well written and shows suggested meal plans for Vegetarian Adults, Vegan Adults, Vegetarian Teenagers, Vegan Teenagers, Vegetarian Children and Vegan Children. The recipes are clearly laid out and easy to follow, and the photography is bright and cheery throughout. Highly recommended (and better than Rose Elliott’s book!)
Vegetarian Chili
Contributed by Tesha Olsen. Serves 6-8
2 1/2 cups raw kidney beans
1 cup raw bulghur
1 cup tomato juice
4 cloves garlic
1 1/2 cups chopped onion
1 cup chopped celery
1 cup chopped carrots
1 cup chopped green pepper
2 cups chopped fresh tomatoes
Juice of 1/2 lemon
1 tsp ground cumin
1 tsp basil
1 tsp chili powder
Salt & pepper
3 Tbs tomato paste
3 Tbs dry red wine
Dash of cayenne
About 3 Tbs olive oil
Put kidney beans in saucepan, covered with 6 cups of water. Soak 3-4 hours. Add
extra water and 1 tsp. salt. Cook until tender (about 1 hour.) Watch water level,
and add more if necessary. Heat tomato juice to a boil. Pour over raw bulghur. Cover
and let stand at least 15 min. Saute onions and garlic in olive oil. Add carrots,
celery and spices. When veggies are almost done, add peppers. Cook until tender.
Combine all ingredients and heat together gently at a moderate heat. Optional: Serve
topped with cheese and/or parsley.
